Ingredients
- 1 minced shallot
- 2 Tbsp butter
- 3/4 Cup Chicken stock
- 1 1/2 cup heavy cream
- 1/2 tsp cayenne pepper
- 2 tsp grated lemon peel
- 2 Tbsp lemon juice
- 1/4 cup Vermouth
- 1 large can chopped tomatoes; drained
- 4 thin slices prosciutto; chopped ( optional)
- 1/4 cup grated parmesan

Preparation
Step 1
Melt butter in large skillet, brown shallots, about 2 minutes. Add chicken stock and boil for about 3 minutes. Add cream, cayenne, lemon peel, lemon juice, vermouth; simmer until sauce thickens about 10 minutes. Add salt and pepper to taste. Add tomatoes, salmon, and prosciutto and simmer for about 15 minutes. Mix in parmesan and serve over angel hair pasta.
