Copano Bay Grilled Redfish

This makes a beautiful bronze-colored fish with a wonderful savory taste. I have only made it with redfish (aka red drum) but I’m sure it would be great with any firm not-oily fish like snapper, grouper or mahi-mahi.

Ingredients
- 1 cup Canola oil
- 1/4 cup Rye whiskey
- 1/4 cup Soy sauce
- 4 cloves Garlic, crushed
- 4 filets Redfish
- 1/2 Onion

Step 1
Combine canola oil, whiskey, soy sauce, and garlic in a big zip-loc freezer bag. Add the fish filets. Squeeze out air from bag and seal. Marinate for 2 to 3 hours.
Use a grilling basket, the kind that holds the food from both sides. Preheat it on the grill, and rub the basket with onion. Discard marinade and grill the fish fillets in the grilling basket on a hot grill, four minutes on first side and then about three minutes on the second side, until flaky. Serves 4.
