Canned Apple Pie Filling

Ingredients
- 12 Cups sliced, peeled, and cored apples
- 2 3/4 C granulated sugar
- 3/4 C ClearJel (amazon.com)
- 2 tsp cinnamon
- 1/2 tsp fresh nutmeg
- 1 C cold water
- 3 C unsweetened, natural apple juice (homemade is the best)
- 1/2 C lemon juice

Preparation
Step 1
Blanch your apple slices for 1 minute and remove with a slotted spoon and keep warm in a covered bowl.
In a large stainless steel saucepan, combine the sugar, ClearJel, cinnamon, nutmeg, water, and apple juice. Bring to a boil – it will thicken up nicely. Add the lemon juice and bring back to a boil. Stir constantly and boil for 1 minute. Remove from heat.
Stir in the apples.
Ladle the pie filling into prepared canning jars, leaving 1 inch headspace. Remove air bubbles, wipe rim, and put on your lids and rings.
Process in a water bath canner. Pints for 20 minutes, Quarts for 30 minutes.
