Mother's Lemon Meringue Pie

Ingredients
- Meringue:
- 3/4 cup sugar
- 1 cup boiling water
- 3 T. lemon juice
- 1 tsp. butter
- 3 T cornstarch
- 2 egg yolks
- Grated rind of 1 lemon
- 1 baked pie shell
- 2 egg whites
- 4 T sugar
- 1/4 teas. cream of tartar if desired

Preparation
Step 1
In saucepan, mix cornstarch with sugar, add boiling water, stirring constantly. Cook 2 minutes. Add rest of ingredients and cook until thick.
Pour into cooked pie shell.
For meringue: beat egg whites until stiff. Add sugar and cream of tartar. Beat until mixture forms peaks. Spread meringue on top of pie. Bake in a 350 oven until meringue is light brown.
