Cheesecake-Walnut Rum Raisin

Ingredients

  • Cheesecake: Glaze:
  • 1 1/2 C raisins 1/4 C packed dk brown sugar
  • 3 TBsp rum or water plus 1 tsp rum flavoring 4 TBsp butter
  • 1 C graham cracker crumbs 1/2 C whipped cream
  • 1/2 C finely chopped walnuts 3/4 C chopped toasted waln.
  • 1/4 C sugar
  • 1/4 C margarine or butter melted
  • 3 8 oz pkgs cream cheese softened
  • 1 14 oz can sweetened condensed milk
  • 3 eggs

Preparation

Step 1

Heat oven to 300
In bowl combine raisins and rum, cover and microwave on high for 1 min. - set aside to cool.
Combine crumbs, walnuts, sugar and margarine-press firmly on bottom of 9 inch spring form pan.
In bowl beat cream cheese until fluffy. Gradually beat in condensed milk until smooth-add eggs and mix well. Drain rum from raisins and stir rum into batter. Pour into prepared pan. Top with raisins. Bake 55-60 min. or until center is set. Cool, serve with warm praline glaze
Glaze: In a sauce pan heat brown sugar, butter and stir in whipped cream. Cool and stir until sugar dissolves. Bring to boil, reduce heat, and simmer for 5 min. or until thickens. Remove from heat and stir in chopped walnuts.
