Vegetable Beef Soup

Ingredients

  • 3 lb. beef short ribs
  • 1 pint tomato juice
  • 1/3 cu. chopped onion
  • 4 tsp. salt
  • 2 tsp. Worchester sauce
  • 1/4 tsp. chili pepper
  • 2 bay leaves
  • 1 lb. can tomatoes
  • 1 cu. diced celery
  • 1 cu. diced carrots
  • 1 cu. diced potatoes
  • 1 small can whole kernel corn
  • 1 small can drained lima beans
  • 1/2 cu. chopped cabbage

Preparation

Step 1

Combine, meat, tomato juice, seasonings & 6 cu. water in soup kettle. Cover and simmer 2 hours. Take meat off of bone and chop/shred. Strain broth and put it back in the soup kettle. Cool to room temperature and then refrigerate until fat hardens on top. After fat hardens remove it from the top of the broth. Warm broth over medium/high heat. Add meat and vegetables and bring to a boil. Reduce heat until broth is simmering. Cover and let simmer 1 hour.
