Cuban Style Pork Roast

+ Used more Garlic because I love it... no change to points (which were surprisingly low in my opinion... for a pork recipe.
+ Used Less Oregano and I still thought it kind of overpowered the dish... but not really in a bad way.
+ Original Recipe called for half the amount of Juice listed above... but because I was going to leave this cooking all day while at work... I was afraid it would dry out. I used some of the extra juice on the side as a little Au Jus. :)

Overall, It's DELICIOUS! The meat is flake apart tender and juicy. I served w/ a side of roasted summer squash and zucchini and a salad. Would probably also go well w/ a zesty rice & bean dish too.

Ingredients

  • 2 tsp table salt
  • 1 tsp black pepper
  • 1 cup(s) fresh orange juice
  • 1/2 cup(s) unsweetened lime juice
  • 2 pound(s) lean pork loin
  • 1 Tbsp minced garlic
  • 2 Tbsp dried oregano

Preparation

Step 1

Combine juices, garlic, oregano, salt and pepper.

Marinate roast over night.

Place in crock pot and cook on low 8-10 hours.
