Lentil Soup

Ingredients
- 1 cup chopped onions
- 1 tbsp extra virgin olive oil
- 1 pound dry brown lentils, rinsed
- 1 tsp kosher salt
- freshly ground pepper
- 6 carrots, sliced medium
- 1 ham bone
- 2 cups ham, cut into 1/2 inch cubes
- 1 tbsp dried thyme
- 32 oz Chicken Broth

Preparation
Step 1
1.In a large soup pot or dutch oven, heat oil over medium heat. Add onion, carrots and thyme, season with salt and pepper. Cook until vegetables begin to softened, 8-10 minutes
2.Add Broth, lentils, ham bone and 4 cups of water. Bring to a boil, reduce heat to medium low and partially cover;simmer until lentils are soft, 45-60 minutes
3. remove ham bone from soup. Cut up meat on the ham bone and add to the soup along with the ham cubes and simmer until heated through, 15 minutes. If necessary thin with water or broth. Add salt and pepper to taste
