Fresh Cherry Cupcakes
UstTARTcherries !!! I created this so I could use some of my cherries from the tree.
- 2 cups flour
- 2 tsp Baking powder
- 1 1/8 cup sugar
- 2 eggs room temp
- 1 stick butter
- 1 tsp vanilla
- 1/4 tsp almond extract
- 1/3 cup milk
- 2 cups pitted chopped tart cherries
- Optional: 1/4 cup sliced almonds
- I used Chocolate Ganache with a bit of heavy whipped cream and a merichino cherry.
Bake 375 .18-25 min
Combine flour, baking powder,sugar&salt in a bowl.
In Mixer beat butter add eggs 1 at a time scraping down sides as you go. Add milk and flour mixture, extracts and fold in cherries.
At this point you can add your almonds if you desire.
Fill baking cups 2/3 full.
