Oatmeal Raisin Cookies (Vegan/Sugar Free)

Ingredients

  • 1/2 cup 100% whole grain spelt flour
  • 1/2 cup quick oats (not instant!)
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt (omit for healthier version)
  • 1/4 tsp. ground cinnamon
  • 1/2 cup raisins (no added sugar or oil)
  • 1/2 cup raw, creamy almond butter
  • 1/2 cup date sugar
  • 1/2 cup unsweetened plant-based milk
  • 1 tsp. vanilla extract

Preparation

Step 1

1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

2. Combine flour, oats, baking soda, salt (if using), cinnamon and raisins in a bowl and stir to combine.

3. In a separate bowl, combine almond butter and date sugar and mix with an electric mixer for 2 - 3 minutes until well-combined and a little more fluffy. Add in milk and vanilla extract and mix until combined.

4. Pour dry ingredients into wet mixture and stir until just combined. Drop by tablespoonful onto prepared pan, leaving about 1 1/2 inch space between each cookie. Flatten and then bake in preheated oven for 10 minutes. Transfer onto cooling rack and allow to cool completely. Store in airtight container.


Note: Date sugar is essentially just dehydrated dates which are then ground to a powder, so it is still a whole food. These cookies can therefore be considered "sugar free".

Note: You may also choose to substitute some of the raisins for chocolate chips. Just ensure to use 80% vegan dark chocolate chips (sugar free) to keep it healthy.
