Ingredients

  • 8 onions - sliced
  • 1 T garlic - chopped
  • 1/3 cup olive oil
  • 2 T all purpose flour
  • 8 cups beef stock
  • 1/4 cup sherry
  • 1/2 t dried thyme
  • 1 bay leaf
  • 1/2 t salt
  • 1/2 t pepper
  • 2 cups Swiss cheese - shredded

Preparation

Step 1

sauté onions and garlic in the olive oil until tender and caramelized.
Sprinkle the flour over the onions and cook for a few minutes more.
Add the remaining ingredients except the cheese and simmer for at least an hour.
Add cheese at service.
