Step 1
In slow cooker on low setting place a 3 lb beef boneless chuck roast cut into four pieces. Then add 1 c BBQ sauce, 1/2 c apricot preserves, 1/2 c choppped green bell pepper, 1 tbsp dijon mustard, 2 tsp packed brown sugar, 1 small sliced onion. Cook for 7-8 hours, remove and cut into slices, return and cook another 20-30 minutes. I TRIED THIS ON 7/25/11 AND THE BOYS REALLY LIKED IT. NOT VERY SPICY. ALSO ONLY COOK IT 7 HOURS, 8 HOURS WILL BE TOO LONG.
