Spinach and Mushroom Quiche

Ingredients

  • 4 eggs beaten
  • 1 1/2 cups light cream
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cups chopped fresh spinach
  • 2 cups chopped fresh mushrooms
  • 1/2 chopped onions
  • 1 cup shredded Swiss cheese
  • 1 cup shredded cheddar
  • 1 9 inch deep dish pie crust

Preparation

Step 1

1. Preheat oven to 400 degrees. Prebake crust 10 minutes
2. In large bowl, whip together eggs, cream, nutmeg, salt and pepper
3. Sauté mushrooms, spinach and onions. Stir into egg mixture with 3/4 cup each of the 2 cheese
4. Put mixture in crust. Top with remaining cheese and some grated Parmesan cheese
5. Bake uncovered 40-45 minutes until bubbly and lightly browned
