Ingredients

    lbs beef stew meat

  • 2

    TBS olive oil

  • 1/4

    cup (1/2 stick) butter

  • 1

    med onion, chopped

  • 1/4

    cup flour

  • 3

    cups beef broth

  • 1

    cup V8

  • 1/2

    tsp paprika

  • 1/2

    tsp minced garlic

  • 1/2

    tsp dried rosemary

  • 1/2

    tsp dried thyme

  • 1/2

    tsp ground black pepper

  • 2

    cups assorted frozen vegetable (okra removed)

  • 2

    cup biscuit mix

  • 1/2

    tsp parsley flakes

  • 2/3

    cup milk

Directions

1) Heat olive oil in pan set to med. Brown stew meat until no longer pink. Remove from pan and set aside. 2) Melt butter in same skillet on med-high heat. Add onions; cook and stir 5 mins or until softened. Sprinkle with flour. Stir with whisk until mixture is well blended. Add broth, V8, paprika, garlic, rosemary, thyme and pepper; whisk until mixture is smooth. 3) Stir in beef and vegetables. Bring to boil; reduce heat to med. 4) Mix baking mix and parsley in med bowl. Add milk; mix well. Drop by spoonfuls onto beef mixture. Cook, uncovered, 10 mins. Cover. Cook 10 mins longer.
