Rhubarb Custard Pie

Ingredients
- Beat together. Mix into egg mixture:
- 3 eggs
- 3 T. milk
- 2 c. sugar
- 1/3 c. flour
- Add 4 c. rhubarb. Pour into 9 inch pie shell and top with Oatmeal crust. Bake 10 min. at 425 and 25 min. longer at 350.
- Oatmeal Crust:
- 1 c. flour
- 1 c. brown sugar
- 1 c. quick oatmeal
- 1 stick butter
- Blend until crumbly. Use 3/4 c. for each pie. This stores for a long time in the refrigerator and with a little cinnamon added, it makes a good topping for apple and cherry pies.
