Ingredients

  • Beat together. Mix into egg mixture:
  • 3 eggs
  • 3 T. milk
  • 2 c. sugar
  • 1/3 c. flour
  • Add 4 c. rhubarb. Pour into 9 inch pie shell and top with Oatmeal crust. Bake 10 min. at 425 and 25 min. longer at 350.
  • Oatmeal Crust:
  • 1 c. flour
  • 1 c. brown sugar
  • 1 c. quick oatmeal
  • 1 stick butter
  • Blend until crumbly. Use 3/4 c. for each pie. This stores for a long time in the refrigerator and with a little cinnamon added, it makes a good topping for apple and cherry pies.
