Ingredients

  • 2 tbsp butter
  • 1 lb turkey
  • 2 carrots
  • 1 onion
  • 1 stalk celery
  • 1 tsp thyme and sage
  • 2/3 cup rice
  • 3 cups chicken stock
  • 2 tbsp tomatoe paste
  • 2 tbsp flour
  • 3 cups milk
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

1. In large pot melt butter and cook carrots, onion, celery, thym and sage for about 5 minutes.
2. Stir in rice. Add stock and tomatoe paste.
3. Cover and bring to boil over high heat. Reduce heat and boil gently for 15 minutes.
4. Stir in turkey and cook for about 5 minutes.
5. Increase heat to medium. Whisk flour into milk and gradually whisk into soup. Cook stirring for about 3 minutes until slightly thickened. Stir in salt and pepper to taste
