Ingredients
- 1 1/2 lb beef flank steak
- 1 onion
- 1 green pepper cut into strips
- 1 jalapeno pepper, chopped
- 1 tbsp cilantro
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp coriander
- 1 tsp ground cumin
- 1/4 tsp salt
- Shredded cheddar cheese

Preparation
Step 1
Cut flank steak into 6 portions. In any size crock pot, combine meat, onions, green pepper, red pepper, jalapeno, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes.
Cover and cook on low for 8-10 hours or on high for 4-5 hours. Remove meat from crock pot and shred. Return meat to crock pot and stir.
