Ingredients

  • 3 large eggs
  • 3 egg whites
  • 4 veggie sausage patties
  • 2 tablespoons lowfat milk
  • 1/4 cup cheddar cheese
  • 1/4 cup mozzarella cheese
  • salt & pepper
  • 1 teaspoon chives (chopped)

Preparation

Step 1

Preheat oven to broil setting.
Whisk together eggs and milk.
Heat a non-stick, oven safe frying pan over medium heat.
Add cooking spray to pan and cook veggie sausage until it is soft enough to crumble.
Crumble with a rubber spatula.
Pour egg mixture into pan covering all the veggie sausage crumbles.
Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.
Sprinkle with cheeses and add salt and pepper to taste.
Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy.
Add chives for garnish.
Remove from pan and cut into slices.
