Foolproof Rib Roast of Beef

Ingredients

  • 1 standing rib roast of beef, any number of pounds
  • salt and pepper
  • Plan your day so you will not need your oven for anything else. Your are going to roast the beef in the A.M. for an hour. You must leave it in the oven all day and oven door must not be opened.

Step 1

Step 1: Let the roast stand at room temperature for 1 hour before placing it in the oven. Preheat oven to 375. Rub roast with salt and pepper, place on rack in a shallow pan, rib side down.

Roast for 1 hour; after the hour turn oven off. Do not open the door.

Step 2: 30-40 minutes before serving turn oven to 375
Roast additional 30-40 minutes, for a rare roast. Medium or well done, add 15 to 20 minutes to Step 2. Do not open oven door.

Suggestion: Remove roast 15 minutes before serving so the juices will be absorbed.
