Ingredients

  • 1 3-4 lb. boneless beef chuck roast
  • 1 1/2 cups ketchup
  • 1 small onion, chopped
  • 1/4 cup brown sugar
  • 1/4 cup red wine vinegar
  • 1 T dijon mustard
  • 1 T worcestershire sauce
  • 2 garlic cloves, minced
  • 1/2 tsp. salt
  • 1/4 tsp. celery seed
  • 1/4 tsp. paprika
  • 1/4 tsp. pepper
  • 2 T cornstarch
  • 2 T cold water
  • 12 kaiser rolls

Step 1

Cut roast in half and place in a 5 qt. slow cooker. In a small bowl, combine the ketchup, onion, brown sugar, vinegar, mustard, Worcestershire sauce, garlic, salt, celery seed, paprika and pepper; pour over roast. Cover and cook on low for 8-10 hours.

Remove meat and skim fat from cooking juices. Transfer to a large saucepan. Bring to a boil. Combine cornstarch and water until smooth and gradually stir into juices. Return to a boil and cook and stir for two minutes or until thickened.

Shred meat with two forks. Return to slow cooker and stir in sauce mixture. Heat and serve on rolls.
