Ingredients
- 4 (6-oz.) filets with skin on
- 1/8 cup white wine
- zest and juice of one lemon
- 1/4 cup chopped dill
- 1 t kosher salt
- 3/4 t ground black pepper

Method:
Soak a cedar plank (raw, not treated or stained) for at least 4 hours or preferably, overnight.
Place salmon, skin side down, in a glass pan. Mix remaining ingredients in a small bowl. Pour over salmon, cover with plastic wrap and refrigerate for at least 30 minutes.
Place salmon on plank; place plank on bbq rack. Start bbq and heat to about 400˚F.* Cook for 15 to 20 minutes until meat flakes easily.
*Note: for a stronger smoke flavor, heat the plank in the bbq before you place the fish in it.
