Ingredients
- Nonstick cooking spray
- 2 cups flour
- 1 cup pack brown sugar
- 3/4 cup granulated sugar
- 2 tsp ground cinnamon
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 cup slightly beaten egg whites (7-8 egg whites)
- 1/2 cup applesauce
- 1/2 cup cooking oil
- 3 cups finely shredded carrots
- 2 cups powdered sugar
- 8 oz cream cheese

Step 1
1. Preheat oven to 350. Coat a 15x10 inch baking pan with cooking spray.
2. In a large mixing bowl, stir together flour, brown sugar, granulated sugar, cinnamon, baking powder and baking soda.
3. In a medium bowl, stir together egg whites, applesauce and oil. Stir into flour mixture. Stir in shredded carrots.
4. Spread batter in the prepared pan. Bake 25-30 minutes. Cool completely.
5. In a medium bowl, beat together sifted powdered sugar and cream cheese until smooth.
6. Spread frosting over the carrot cake; slice into bars.
