Ingredients

  • 1 1/3 cups flour
  • 1 cup oats
  • 1 T. baking powder
  • 1/2 t. baking soda
  • 1 t. cinnamon
  • 1/2 cup brown sugar
  • 3/4 cup finely shredded carrots
  • 1/2 cup raisins
  • 1/2 cup milk
  • 1 beaten egg
  • 1/3 cup melted salted butter
  • 1 t. vanilla

Preparation

Step 1

Spray a 12 cup muffin pan. Combine flour and oatmeal; sprinkle baking powder, soda and cinnamon on top. Mix thoroughly. Stir in brown sugar; mix until well blended.

Shred carrots; add to bowl along with raisins. Mix thoroughly. In a separate bowl, combine milk, egg, butter and vanilla. Give it a good stir. Dump contents of the small bowl into the larger bowl. Gently stir just until the dry ingredients are moistened and no dry pockets remain. Fill the muffin cups ¾ full.

Bake at 375 for 20-25 minutes. Cool muffins for 10 minutes. Remove from muffin pan.
