Moist and delicious with a wonderful rhubarb flavor.
- 1 1/2 cups packed brown sugar
- 2/3 cup oil
- 1 egg
- 1 tsp vanilla
- 1 cup buttermilk or sour milk (made by adding 1 tsp vinegar to milk)
- 1/2 tsp salt
- 1 tsp baking soda
- 2 1/2 cups flour
- 2 cups diced rhubarb
- 1 tbsp butter
- 1/2 cup granulated sugar
Preparation time 15mins
Cooking time 16mins
Preheat oven to 350*.
Mis brown sugar and oil. Add egg, vanilla and milk.
Sift together flour, salt and baking soda.
Mix with wet ingredients. Fold in rhubarb.
Divide into two well greased and floured bread loaf pans.
Sprinkle with sugar and dot with butter.
Bake for 55-60 minutes.
remove from oven and let cool.
