Ingredients

  • Pasta Primavera Salad

  • Ingredients:

  • 12

    oz. pasta (fusili will hold the dressing best, but any pasta works)

  • ½

    can black olives

  • 2

    chopped green onions

  • 2

    diced carrots, lightly steamed

  • ½

    C snow peas

  • 1

    bunch broccoli, lightly steamed

  • 1

    pint cherry tomatoes

  • (Any vegetable you like to swap in or out works, these are just some ideas.)

  • Dressing:

  • C Olive Oil

  • ¼

    C lemon juice

  • 3

    minced garlic cloves

  • 2

    T basil

  • ¼

    C red wine vinegar

  • 1

    t salt

  • ½

    t ground pepper

  • 2

    T dijon mustard

Directions

1. Cook the pasta according to package directions, leaving slightly al dente. Chill pasta. 2. Mix all dressing ingredients in a bowl or measuring cup. 4. Add veggies to the pasta. 5. Add dressing to the pasta. 6. Chill before serving. Holds well for several days in the fridge.
