Chicken, Mushroom and Goat Cheese Lasagne

Delicious. Great for a summer dinner, served with a green salad.

Grill 6 chicken breasts the night before.

Ingredients

  • 6 whole grilled chicken breast (cooked through)
  • 1 1/2 jar Alfredo sauce
  • 2 cup goat cheese, crumbled
  • 1 cup Parmesan, grated
  • 1 1/2 jar tomato sauce
  • 2 cups sauté portabella mushrooms
  • 1 crown broccoli, cut into small florets & blanched
  • 5 large pasta sheets

Step 1

Preheat oven to 325*.

Finely slice the grilled chicken breast and mix with 1 1/4 jars of Alfredo sauce, set aside until ready to assemble.

Mix the mushrooms and broccoli florets with 1 1/4 jars of tomato sauce, also set aside.

Using a casserole dish, layer the ingredients as per the following:

1st layer - the 1/4 jar of tomato sauce
2nd layer - pasta sheets
3rd layer - 1/2 chicken Alfredo mix with goat cheese
4th layer - pasta sheets
5th layer - 1/2 tomato, broccoli & mushroom mix with 1/2 Parmesan
6th layer - pasta sheets
7th layer - remaining chicken Alfredo mix with remaining goat cheese
8th layer - pasta sheets
9th layer - remaining tomato, broccoli & mushroom mix with remaining Parmesan
10th layer - pasta sheets
11th layer - 1/4 jar Alfredo sauce to cover the top

Once assembled, place in a 325F oven for 45 minutes.

Remove from the oven and allow to sit for 10 minutes before serving.
