Ingredients

  • 3-4 lb pork roast
  • 2 large bell peppers, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • Cajun seasoning to taste

Preparation

Step 1

Brown pork roast (all sides) in a black iron skillet (w/1 tsp of sugar in 2 Tblsp. Of oil)
Take out roast and sauté green peppers, onion, and garlic
Add 2-3 inches of water
Put roast back in, cover and simmer 1 – 2 hours until roast is completely done/tender
Add Cajun seasoning
Serve with rice
