Spicy Chipotle Shrimp Salad

Ingredients

  • 1 1/2 lbs large shrimp
  • Salt & pepper
  • Cooking spray
  • 1/4 C finely chopped clelery
  • 2 T finely chopped red onion
  • 2 T chopped cilantro
  • 3 T mayonnaise
  • 1 T choptle chile, chopped
  • 2 t lime juice
  • 1/2 t cumin
  • 8 Boston lettuce leaves

Preparation

Step 1

Heat grill pan; sprinkle shrimp with salt & pepper.
Coat pan with cooking spray. Add half of shrimp; cook w min on each side. Remove and repeat with remaining shrimp. cool for 5 min.
Place shrimp in med. bowl; stir in celery & next 6 ingredients. arrange 2 lettuce leaves on each plate & top with 3/4 C shrimp mixture.

Serve with Avocado, Mango & Pineapple Salad:
Heat grill pan. add 4 pineapple slices & 1 C sliced mango; cook 3 min on each side. Divide pineapple, mango & 1 peeled, sliced avocado evenlt among 4 plates. Combine 1 1/2 T lime juice, 1/2 t. honey & 1/4 t. salt; drizzle evenly over salads. Sprinkle 2 T cilantro leaves over salads.
