Pork Sausage Ragu

Ingredients
- 4 Tablespoons olive oil
- 1 Medium onion roughly chopped
- 2 stalks celery roughly chopped
- 1 medium carrot roughly chopped
- 6 mild Italian sausages or mild sausage meat
- 1 Teaspoon chili flakes
- 1 Teaspoon fennels seeds
- 1 Teaspoon dried oregano
- 4 cloves garlic diced
- 4 Tablespoons balsamic vinegar
- 1 28 oz can diced tomatoes
- 4 sprigs slice green onions
- 4 cups penne pasta or desired pasta

Step 1
In a food processer add onions, celery, carrots with garlic and spices blend
well then add sausage meatand continue to blend until well mixed. In a
pan with olive oil saute blended meat mixture until cooked add in
balsamic vinegar. Cook for an additional minute then add the tomatoes
and1/2 cup of water. Cook until desired thickness.
Cook pasta and toss the meat sauce with the cooked pasta. Add parmesan
cheese and slice green onions.
