Ingredients

  • 4

    Tablespoons olive oil

  • 1

    Medium onion roughly chopped

  • 2

    stalks celery roughly chopped

  • 1

    medium carrot roughly chopped

  • 6

    mild Italian sausages or mild sausage meat

  • 1

    Teaspoon chili flakes

  • 1

    Teaspoon fennels seeds

  • 1

    Teaspoon dried oregano

  • 4

    cloves garlic diced

  • 4

    Tablespoons balsamic vinegar

  • 1

    28 oz can diced tomatoes

  • 4

    sprigs slice green onions

  • 4

    cups penne pasta or desired pasta

Directions

In a food processer add onions, celery, carrots with garlic and spices blend well then add sausage meatand continue to blend until well mixed. In a pan with olive oil saute blended meat mixture until cooked add in balsamic vinegar. Cook for an additional minute then add the tomatoes and1/2 cup of water. Cook until desired thickness. Cook pasta and toss the meat sauce with the cooked pasta. Add parmesan cheese and slice green onions.
