Chicken Breasts Diane

Ingredients

  • 4 boneless chicken breasts
  • 1/2 tsp salt
  • 1/4 to 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 tbsp chopped fresh chives
  • juice of one lime or lemon
  • 2 tbsp brandy or cognac, optional
  • 3 tbsp chopped parsley
  • 2 tsp dijon mustard
  • 1/4 c chicken broth

Preparation

Step 1

1. Flatten chicken and season with salt and pepper.
2. Heat 1 tbsp of each the oil and butter in a large skillet.
3. Cook chicken over high heat for 4 minutes on each side. Transfer to warm platter.
4. Add chives and green onion, lime juice and brandy, parsley and mustard to pan. Cook 15 seconds whisking constantly.
5. Whisk in broth and stir until smooth. Whisk in remaining butter and oil.
6. Pour over chicken and serve immediately.
