- 9 ” pie crust
- 6 medium tomatoes – cut in 1/2 inch slices and sprinkle with salt to get moisture out
- 1/2 cup mayonaisse
- 1/4 cup chopped onion
- 2 tbs. chopped basil
- 3/4 cup parmesan cheese (can also use other cheeses in place of or in addition)
Place ¼ cup of cheese on crust and bake 10-12 minutes at 350.
Place tomatoes in pie crust.
Mix mayo, onion, basil and cheese and spread over tomatoes.
Can also layer the tomatoes and mixture.
Bake @ 350 for 35–40 minutes. Let cool before eating.
