Saucy Carbonara Pasta

Ingredients
- 1 16 oz. package of spaghetti
- 2 tbsp olive oil
- 4 oz. dried panchetta or bason
- 1/2 c walnuts chopped
- 4 cloves garlic, minced
- 1/2 c white wine
- 1/4 tsp crushed red pepper flakes
- 2 eggs
- 1 c parmesan cheese
- 1/4 c chopped parsley
- Ground black pepper

Preparation
Step 1
Cook pasta according to package directions. Meanwhile, in a large skillet heat the oil. Add pancetta and cook 3-5 minutes until crisp. Add walnuts, garlic and red pepper flakes. Cook 1-2 mins, stirring often. Add wine and cook 2-3 mins to reduce liquid slightly.
Drain pasta and add to skillet.
Whisk eggs and half the cheese together and add to skillet. Pull skillet from the heat.
Top with cheese, parsley and pepper.
