Ingredients
- 2 Tablespoons butter
- 1 cup thinly-sliced red onion
- 1 cup chopped tomato
- 1 Tablespoon lime juice
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon chili powder
- 2 ( 12 ounces total ) tilapia or cod fillets,
- each sliced in half lengthwise
- 2 Tablespoons chopped cilantro
- multi-grain tortillas
- lettuce leaves
- low-fat sour cream

Preparation
Step 1
Heat 1 Tablespoon of the butter at medium-high. Saute the onion till soft. Add the tomato and cooked until wilted, 1-2 minutes. Remove the onion and tomato mixture to a bowl. Wipe the skillet clean and add another Tablespoon of butter. Add the fish fillets and sprinkle with half of the spices mixture. Cook 3 minutes, turn, and repeat on the other side. Add the onion and tomato mixture, cook 1 minute. Remove skillet from heat and garnish the fillets with the cilantro. Serve with tortillas, lettuce leaves, and sour cream.
