Ingredients
- 24 oz. fresh mushrooms (with stems)
- 2 rolls Ritz crackers (finely crushed)
- 1/4 cup onions (minced)
- 1/4 cup celery (minced)
- 1/4 grated parmesan cheese
- 1 cup shredded monterey jack cheese
- 1 1/2 sticks of butter
- salt & pepper to taste

Step 1
Wash and dry mushrooms. Remove stems and mince finely. In a medium saucepan over low heat saute mushroom stems, onions and celery (in a small amount of butter) until tender. Add the rest of the butter . When the butter has melted, shut the stove off and add the remaining ingredients. Stir with a wooden spoon until completely mixed. The mixture will form a soft ball. Stuff each mushroom generously with a teaspoon and line in a cookie sheet. Bake at 350 degrees for approximately 20 minutes or until mushrooms are tender.
