Ingredients

  • 4

    (4-oz.)boneless, skinless chicken breast halves

  • 1

    tablespoon Dijon mustard

  • 1/4

    cup orange marmalade

  • 1

    tablespoon olive oil

  • 1

    tablespoon ORTEGA Diced Jalapenos

  • 2

    tsps. lime juice

  • 1/2

    teaspoon grated lime peel

  • 1/4

    teaspoon salt

  • 1/4

    teaspoon ground black pepper

  • 1/8

    teaspoon ground cumin

  • 1

    tablespoon finely chopped cilantro, optional

Directions

PREHEAT oven to 350°F. Line baking sheet with heavy-duty foil; place chicken on prepared baking sheet. COMBINE marmalade, mustard, oil, jalapeno, lime juice, lime peel and cumin in small bowl. Brush chicken generously with half of marmalade mixture. BAKE for 30 minutes. Remove from oven; brush chicken generously with remaining marmalade mixture. Bake for an additional 15 to 20 minutes or until chicken is no longer pink in center. Season with salt and ground black pepper. Serve with corn muffins and sautéed vegetables.
