Ingredients

  • 2 kg bone in pork shoulder roast
  • Dry Rub
  • 2 tbsp red praprika
  • 2 tbsp packed brown sugar
  • 2 tbsp coarse salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp black pepper
  • 1 tsp dry mustard
  • 1 tsp cayenne pepper
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • Sauce
  • 1 cup ketchup
  • 3/4 cup apple cider vinegar
  • 3/4 cup cola
  • 1 tbsp maple syrup
  • reserved spices from dry rub

Preparation

Step 1

Mix all dry rub ingredients together.
Measure 2 tbsp of spice mixture and set aside.
Rub remaining spice mix over pork.
Bake pork in a tightly foiled pan at 325 for 4-5 hours.
Pork is done when meat is falling off the bone.

While pork is cooking make sauce

Mix all sauce ingredients together and bring to a boil.
Reduce heat and simmer for 10 minutes.
Remove from heat and set aside

When pork is cooked, pour off all liquid and reserve.
Pull and shred pork, removing all bones.
Remove all grease from cooking liquid and mix with pulled pork and place in a crock pot.
Keep meat warm in crock pot until serving.
Pour sauce over meat when serving.
