Ingredients
- 2 cups unpeeled tomato - about 3/4 lb; chopped
- 1/4 cup scallions; chopped
- 3 tablespoon lime juice (fresh)
- 2 tablespoon canned chopped green chili peppers
- 1 tablespoon parsley
- 1/8 teaspoon Salt
- 1 dash garlic powder
- 1 dash pepper
- 4 4 oz red snapper fillets

Preparation
Step 1
Combine five 9 ingredients in a large skillet; stir well. Bring to a boil;
reduce heat, and simmer, uncovered, 10 minutes. Add fish, cover, and cook
an additional 11 minutes or until fish flakes easily when tested with a
fork. Place fish on a platter; spoon tomato mixture on top of fish, using a
slotted spoon.
