Ingredients
- 3.5 lbs peaches (8-10), peeled, halved, pitted, and cut into chunks
- 1.25 lbs sugar (3 cups)
- 1 tbsp plus 1 tsp lemon juice
- salt

Preparation
Step 1
Working in batches, puree peaches until chunky in a food processor. Transfer to a saucepan, add sugar, lemon juice, and 1/2 tsp salt. Bring to a boil, stirring frequently. Boil, continuing to stir, until bubbles slow, foam subsdes, fruit rises to top and jam sticks to a spoon. About 12 minutes. Let cool. Refrigerate until completely cooled.
