Sage Pork Chops

Ingredients

  • 4 boneless pork chops( 6oz each)
  • Kosher salt and ground pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium shallot, minced
  • 1 tsp fresh sage, chopped or 1/4 tsp dried sage
  • 1/4 tsp dried thyme leaves
  • 1/2 cup dry white wine

Preparation

Step 1

1. Season pork generously with salt and pepper. In a large skillet, heat oil and butter over medium heat, add pork. Cook until browned and opaque throughout 4-5 minutes per side. Transfer to plate, and cover loosely with aluminmum foil to keep warm
2. Make sauce-Add shallot to skillet; cook over medium heat, stirring until softened, 1-2 minutes. Add sage, thyme and wine. Simmer until sauce is reduced to about 1/3 cup, 2-3 minutes;stirin any accumulated juices from plate with meat. Transfer chops to platter and drizzle with sauce or place chops on individual plates and drizzle with sauce
