- 2 local, organic Granny Smith apples, unpeeled and julienned
- 1/2 ½ cup red onion, very thinly julienned
- 1/2 ½ cup lemon juice
- 2 tsp fennel seeds
- 1/4 ¼ cup fennel fronds
- 1/4 ¼ cup extra virgin olive oil
- Himalayan organic salt and cracked mixed pepper
