Chicken-Moroccan Style Ziti

Ingredients

  • 1 lb. skinless boneless chicken cut into 1 inch pieces
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 medium onion, diced
  • 1/2 tsp curry powder
  • 1 - 14 1/2 oz can diced tomatoes with italian herbs
  • 1/2 pound ziti or penne

Step 1

To prepare the sauce, sprinkle the chicken with the salt and pepper. Heat a 12 inch nonstick skillet and set over high heat. Add the chicken and cook, turning the pieces as they brown, about 4 minutes. Transfer the chicken to a plate and set aside.

Reduce the heat, add the onion, and cook until lightly browned, 4 minutes. Stir in the curry powder and cook until fragrant, 1 minute. Return the chicken to the skillet, add the tomatoes, and bring to a boil. Reduce the heat, cover, and simmer until the flavors blend and the chicken is cooked through, 20 minutes.

Meanwhile, cook the ziti according to package directions. Drain and toss with the sauce in a large serving bowl.
