carrots, peeled and shredded
cup dried lentils, rinsed and drained
tbsp celery, thinly sliced
tsp curry powder
Combine lentils and water in a heavy saucepan over medium high heat. Bring to a boil. Reduce heat to medium low. Skim off any foam that may appear at the top. Add remaining ingredients. Simmer 40-45 minutes or until lentils are tender. Season with salt and pepper to taste.
