    lb. farfalle

  • 2

    small zucchini

  • 2

    tbs. olive oil

  • 1

    clover garlic, minced

  • 3

    plum tomatoes, diced

  • 1

    tbs. chopped basil

  • Ground pepper

Directions

Bring a pot of water to a boil. Add salt and the pasta, cook until al dente. Using a mandolin, thinly sliced the zucchini. In a large skillet, over medium heat, warm the olive oil. Add the zucchini and garlic, and sauté until the zucchini is tender, about 4 – 6 minutes. Drain the pasta and add it to the skillet. Add the tomatoes and basil. Season with salt and pepper, toss, and serve.
