Onion and Pastrami Tarts

Ingredients

  • 3 Tbs olive oil
  • 2 large onions,diced
  • 1 lb pastrami,sliced in strips
  • 2 eggs
  • 3/4 cup soy milk
  • 2 pkg. mini frozen tart shells(24 total)

Preparation

Step 1

Preheat oven to 350. Saute onions for approx. 10 min in the olive oil. Add pastrami and cook for 1 additional minute. Remove from heat. Transfer to a bowl and allow to cool.
Once cool,stir in eggs and soy milk.Mix well. Spoon mixture into mini tart shells.
Bake for 30 min.or until golden and liquid is set.
