Ingredients

  • 1 bag boil in bag rice, 2 c size
  • 3 skinless, boneless chicken breast, cut into large pieces
  • 1 can (15 oz) diced tomatoes and liquid
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) black beans, drained
  • 3 garlic clove, minced
  • 1 T of mexican style dry seasoning blend
  • chili powder and cayenne pepper (optional)

Preparation

Step 1

Prepare rice according to package directions.

Preheat over to 350. spray large casserole dish with non-stick spray. Arrange chicken pieces and add remaining ingredients. Cover and place in oven. Cook 15-20 mins or until chicken is thoroughly cooked.
