Apple Pecan Cake with Brandied Caramel Sauce

Ingredients
- 1 1/2 cup vegetable oil
- 1 cup white sugar
- 1 cup brown sugar
- 3 large eggs
- 3 tbsp brandy
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp allspice
- 1/8 tsp cloves
- 1 1/2 cup chopped pecans
- 3 1/2 cup apples, peeled, cored and coursely chopped
- Brandied Caramel Sauce
- 1 cup white sugar
- 3 tbsp cold water
- 1 cup whipping cream
- 2 tbsp butter
- 1/4 cup brandy
- 2 tsp. vanilla

Step 1
Preheat oven to 325F. Lightly oil a 10 -12 cup bundt pan
In a large bowl, beat together the oil and sugars. When well mixed, add the eggs one at a time and contiune to to beat until well combined. Stir in brandy. Set aside.
Mix flours, soda, salt, cinnamon, allspice and cloves. Add the oil mixture and stir til combined. Add pecans and apples, mix well.
Pour into greased pan and abke 60 to 75 minutes or until cake tester comes out clean. Let cake rest for 10 minutes before removing mold.
Sauce:
Place sugar and the water in a small saucepan over medium high heat. Bring to a full boil. When the sugar begin to turn amber colour, remove the pan from the heat and stand back as you pour in the cream. Reduce heat to low and return potto the element. Stir the mixture until smooth.
Remove from heat and stir in the butter. When cooled slightly, stir in vanilla and brandy. Let sauce cool to room temperature.
Pour the sauce over individual slices of cake.
