Tomato Chutney with Grilled Bread

Ingredients

  • 2 Tbsp. canola oil
  • 1 large finely chopped onion
  • 3 cloves of garlic, minced
  • 4 cups (2 lbs) chopped tomatoes
  • 1/4 tsp crushed red pepper
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1 tsp kosher salt
  • grilled bread
  • ricotta cheese
  • honey

Preparation

Step 1

In a saucepan heat canola oil over medium-high heat. Add onion and garlic. Cook until soft; about 8 minutes. Add tomatoes and next 4 ingredients. Stir occasionally until mixture thickens; 20-25 minutes. Remove from heat and cool. Serve with grilled bread spread with ricotta cheese and a drizzle of honey. Keeps chilled up to 5 days.
