Oriental Shrimp and Rice
- 1 # unpeeled medium size shrimp
- 3 3/4 cups water
- 1/2 cup soy sauce
- 2 cups uncooked long grain rice
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 1/4 cup butter, divided
- 4 eggs, beaten
Peel and Devine shrimp
Combine water and soy sauce. Bring to a boil. Cover. Reduce heat and simmer 20 minutes until rice is tender and water is absorbed.
Sauté onion and green pepper in 2 Tbs melted butter until crisp- tender. Add shrimp and sauté 3 minutes. Stir into rice.
Melt rest of butter in large skillet. Add eggs and cook without stirring until eggs begin to set. Draw a spatula across bottom if pan to form large curds. Continue until eggs are thickened. Stir into rice, toss gently
