  • 12 Classics Crepes

  • 2 tbs. butter

  • ¼ cup flour

  • 1½ cups heavy cream

  • ½ cup milk

  • 3 egg yolks

  • ¼ cup dry sherry

  • salt and pepper

  • 2½ cups cooked lobster


Make classic crepes as directed and set aside. Melt butter in top of double boiler over simmering water. Stir in flour and cook 2-3 minutes. Gradually add cream and milk. Cook, stirring occasionally until sauce thickens. Mix a little of the hot cream mixture into egg yolks. Carefully stir egg yolk mixture into sauce. Blend in sherry, salt and pepper. Add lobster and heat through. Fill crepes, reserving some of the sauce for the top of the crepes. Roll and place in buttered ovenproof serving dishes. Top with the reserved sauce. Place in 350 oven 10 to 15 minutes, or until heated through. Makes 6 servings.
